Lisa from The Old Library Cafe shares her recipe for delicious and warming Apple & Cinnamon Muffins.
These muffins are well-loved by our customers and are a delicious, comforting treat.
I like to use sour or tart apples for these. Wonderful warm from the oven, they will also be good for up to 3 days.
225g plain flour
2 tsp baking powder
200g light muscovado sugar (or golden caster sugar works fine too)
3 large eggs
3 or 4 apples, depending on size and preference
3 teaspoons ground cinnamon
Juice of half a lemon
Heat oven to 170 C
Prepare 12 cases in a muffin tray.
Core and chop apples. You can peel them but I leave the skins on as it's less waste and easier! Add the sultanas, stir in the lemon juice and cinnamon.
Mix flour and baking powder.
Beat butter with sugar until light and fluffy.
Beat in the eggs, one at a time. Fold in the flour and baking powder. Fold in the apple mix. Spoon into muffin cases.
Bake for 30 mins.
Leave to cool for 15 mins and enjoy.
